THE UPSIDE-DOWN CHEESECAKE

ok, are you ready for this deliciousness that gives you only 120 kcals/ 8.7g carbs/ 4.2g fat/ 11.4g protein per slice??!!

get comfortable and read on

makes 12 servings

for the filling:
1kg/ 2.2lb quark cheese or greek yogurt or cream cheese, low-fat
enough gelatin that will make your cheesecake firm (i used 8 sheets of gelatin).
1 scoop vanilla whey (but it can be any flavor really)
1 lemon, juice
pure stevia

mix the ingredients above and prepare the gelatin according to the package directions. pour the batter in a cake tin. refrigerate.

for the blueberry sauce:
cook 3/4 cup blueberries mixed with pure stevia, 1 tsp lemon juice and 2 tsp corn starch until you get a sauce. add some water if necessary. let it cool and pour over the cheesecake.

for the crumbles:
mix 80g/ 2/3cup oat germ
1 Tbsp coconut oil
1/4 cup water
pinch of sea salt
pinch of pure stevia

sauté in a non-stick pan until the crumbles dry up. sprinkle over the cheesecake before serving (otherwise will get wet)

cut in 12 slices. 1 slice is 1 serving....... but my pm snack macros say i can have 3 

enjoy!
