filled with ham, light stracchino cheese, cherry tomatoes, arugula and grated parmesan.
the oat flat bread is very easy and simple to make. just mix together 1/4 cup oat flour, 1/2 cup water and a pinch of salt. let it sit for a while so that the flour absorbs the water. add the baking powder and bake the flat bread like a pancake.
when the bread is done, spread it with cream cheese or quark.. i used stracchino which is an italian type of cheese, probably very difficult to find outside the country. it tastes like yogurt but it has a creamy texture. anyhow, just use your fave type of cheese, it can be mozzarella or cubed swiss cheese... add the ham, the cherry tomatoes and fold the bread in half. toast it in the pan on both sides. when done remove to a plate and add in the arugula and grated parmesan.
