For the pancake:
1 Tbs of oat germ or oat flour
100g/ 3.3 oz creamcheese, non fat
3 egg whites
squeeze of lemon
vanilla extract
Stevia
Pinch of salt
¼ cup zucchini squash
blend everything together and cook over low to medium heat. make sure you don't burn it. it will be very light and fluffy so turn it over very carefully. continue cooking over low heat making sure it doesn't burn. transfer it to a plate and spread it with:
1 Tbs almond butter mixed with
1 tsp cacao, unsweetened
stevia
fold in half and sprinkle on top with some more stevia. serve hot or cold (from the refrigerator).
ok, now come and tell me that eating healthy is tasteless and boring!
