HOME-MADE PLUM PRESERVES (low in sugar)

i'm sharing this recipe because preserves DO fit your meal plan, unless you are prepping for a contest. of course, portion control is a must with calorie-dense foods.

my home-made preserves are pectin-free. all you need is:
5kg/ 11 lbs plum;, washed, sliced and pitted. possibly organic.
1kg / 2.2 lbs brown sugar
200ml/ 3/4 cup red or white wine vinegar

mix the ingredient above and let sit the mixture over night.

before cooking, add a little dark rum. pour everything in a deep baking tray and bake for 2 hours at 200°C/ 392°F. easy peasy lemon squeezy.

pour the hot preserves into the jars and pasteurize according to the manufacturers directions. i just closed the jars and turned them upside down. but it really depends on the type of jars you are using. some need to be boiled for 25 min and then cooled in the cooking water.

i love my preserves on my protein pancake in the morning.
