MY MEXICAN CHICKEN

i got tired of eating the same chicken every day so i decided to give it a spicy twist. and this is how i like to have my chicken recently.

what you need:
chicken, grilled with mexican spices
cubed eggplant
cubed red bell pepper (or green or both)
cubed cherry tomatoes
more mexican spices (you can make you own by mixing paprika, hot pepper, salt.. i also love to add oregano, basil... anything that can make it taste better  )
garlic

oil a non-stick pan and sauté the eggplant with garlic. when the eggplant is almost done, add the bell pepper. sauté for another 2 min and add the mexican spice mix. add the cherry tomatoes and sauté for another minute or so. add the salt. voilà, the veggies are ready.
serve the chicken topped with veggies and some [hAt] salsa dinner's ready!!
