HOME-MADE WHOLEGRAIN BUCKWHEAT TORTILLAS

(can be whole wheat or kamut...) they taste just like the store-bought!

recently i have a tortilla for lunch every day... you can fill it practically with anything and it will always taste delish. the only problem i got, was that here in italy you can find only flour or corn tortillas. i mean, if you really dig in some health store then you can also find the kamut ones and even whole wheat, but they are so expensive. so i found this very simple recipe that makes everything so much affordable.

ok, here we go...
for 12 large tortillas you will need:
4 cups flour (i used buckwheat, which is also gluten free)
1 tsp salt
1/4 tsp baking soda or cream of tartar
1.5 cup boiling water

mix all the ingredients in a bowl and divide in 12 balls.. roll them out and bake in a pan on both sides. remove the tortilla from the pan and put it in a bag. you'll notice the the bag will become all steamy and wet. don't worry, this will keep the tortillas fresh and soft. store in refrigerator for... well, i don't know.. until you notice some mold on them  i kept them for 2 weeks and they were still like the first day.
