for the omelets (each):
3 egg whites
1 tbs psyllium husks or oat flour
salt
for the tomato sauce:
organic tomato sauce with chunks
1 handful basil leaves
salt
1/2 tsp stevia
1 Tbs onions, fresh, chopped
mix everything together and bring to a simmer. let it cook for about 15 minutes.
veggies:
saute a cubed eggplant & zucchini with some garlic, salt & pepper.
top each omelet with the veggies, some tomato sauce and low-fat or non-fat cream cheese. fold the two sides of the omelet to make a roll. place the omelets on a baking sheet and sprinkle them with some freshly grated parmesan (not the fake one). place under the broiler until the cheeses melt and start to brown.
