FRUITY BAKED OATMEAL

1 ¼ + ¾ plain oats, dry
1 ½ cups unsweetened almond milk
1 tsp baking powder
½ tsp salt
1 tsp cinnamon
¼ tsp nutmeg
½ cup sliced almonds
2 egg whites
3 + 3 Tbs stevia
2 tsp vanilla extract
1 Tbs mashed ripe banana
2 ripe bananas, sliced
2 cups frozen berries
Raw organic honey for topping (optional)
Soak ¾ cup oats in ½ cup almond milk.

Preheat oven to 375°F/ 190°C. grease a smaller baking dish with coconut butter.

Mix the rest of the oats with 3 Tbs stevia, salt, spices, half of the almonds and baking powder.

In another bowl mix together the milk, the egg whites, 3 Tbs stevia, vanilla and the mashed banana.
Layer the banana slices on the bottom of the baking dish. Top them with half of the berries.
Add the soaked oats to the dry mixture. Mix together.
Pour the dry mixture on the baking dish covering the fruit. Press down the oats with a rubber spatula.
Slowly pour over the milk mixture, making sure to distribute it evenly.
Top with the rest of the berries and sprinkle with the rest of the almonds.
Bake for 50 minutes.
Serve hot drizzled with honey (optional).

I cut mine in 10 slices and 1 serving has 6.9g protein, 28.4g carbos, 5.5g fats, 186 calories. I used my home-made oat milk. If you are not having protein apart, you can still make your oatmeal richer in protein by adding whey and more milk to the liquid mixture. If you don’t add milk, the oatmeal will result spongy.
