HEALTHY PROTEIN RICH HOME-MADE GRANOLA

125g raw lentils (you can use quinoa instead)
200g plain oats
100g raw organic honey
2 Tbs coconut oil
2 tsp cinnamon
1 tsp vanilla extract
100g almonds, roughly chopped
100g walnuts, roughly chopped
3 Tbs sunflower seeds, optional
2 Tbs sesame seeds, optional
50g coconut flour

preheat the oven to 150°/ 300°F. cook the lentils "al dente", for about 8 minutes. rinse.
heat the honey and the oil so that they become liquid. stir in cinnamon, vanilla extracts, the lentils and the oats. mix well. add the almonds and the walnuts (and the seeds). arrange on a baking sheet and bake for 45 min stirring every 10-15 min. add coconut flakes and bake for another 10 minutes.

keep an eye on your granola, or it may burn. you'll also may need to lower the oven temperature.

this granola is not very sweet, but if you add some stevia to your milk, it tastes wonderful. i usually soak it in the milk over the night so it becomes softer.
