blend together:
3 egg whites
1/2 ripe banana
a handful of zucchini squash or cubed pumpkin
1/3 cup oat flour
1/3 cup cooked brown rice
pure stevia
cinnamon
pumpkin spice mix or pinch of nutmeg
pinch of salt
cook the pancake over medium heat by flipping over once.
serve with 1/2 sliced ripe banana and sprinkle with more stevia and cinnamon.
makes 1 serving: 371 kcal/ 67g carbs/ 3.9g fats/ 18.7g protein
